No Bake Superfood Berry Bars
Cool off with this Dairy-Free Dessert!
When my colleague Kaila made these bars for me, I officially believed in desserts that don’t need dairy. These bars proved to me that vegan options can be just as good, if not better! The combination of berries, cashews, and a touch of honey (or maple syrup for a vegan-friendly version) creates a sweet, satisfying treat. Whether you're looking for a healthy snack or a delicious dessert, these No-Bake Superfood Berry Bars are perfect for any occasion, especially when you're wanting a cool treat to fight off the hot and humid weather of the UAE.
Personally, I use honey, but if you're looking to keep it fully vegan, you can easily swap in maple syrup or agave. Plus, you can simplify this recipe into one layer or opt for the two-layer version, making it customizable for your taste and time. Kids will love the fruity flavors, and the spinach layer can even be hidden if they’re not fans of green!
This recipe is adapted from the wonderful Superfood Berry Cashew Cream No-Bake Bars by Food Faith Fitness. The original inspiration offers a delicious and healthy treat, and I've simplified and personalized it for an even easier version that still delivers on taste and nutrition.
Ingredients:
Base Layer:
1 cup cashews
1 cup rolled oats
1/4 cup honey or maple syrup
1/4 cup coconut oil (melted)
1 tsp vanilla extract
Berry Layer:
1 cup mixed berries (fresh or frozen)
1/2 cup cashews
1-2 tbsp honey or maple syrup
1/4 cup coconut oil (melted)
1/2 tsp vanilla extract
Spinach Layer
(Optional):1/2 cup spinach (fresh or frozen)
1 tbsp honey or maple syrup
Instructions:
Prepare the Base Layer:
In a food processor, combine cashews, oats, honey, coconut oil, and vanilla extract. Process until the mixture sticks together.
Press this mixture into the bottom of a lined baking dish or pan. Set aside in the fridge to firm up.
Make the Berry Layer:
In the same food processor, blend mixed berries, cashews, honey, coconut oil, and vanilla extract until smooth.
Spread the berry mixture evenly over the base layer. If you’re skipping the spinach layer, you can stop here and refrigerate the bars to set.
Optional Spinach Layer (If Using):
If you want to add the spinach layer, simply blend the spinach with honey and coconut oil in the food processor.
Gently spread this layer over the berry mixture, creating a second layer on top. It will add a slight green tint, but the taste is mild, especially when combined with the berries.
Chill and Set:
Refrigerate the bars for at least 2 hours to allow them to set.
Once set, slice into bars or squares and enjoy!
Simplify It:
If you want to skip the separate layers for the berries and spinach, simply mix the spinach (if using) directly into the berry layer and spread everything into one layer on top of the base layer. Refrigerate and enjoy a simplified version!
